Cool the cream down to 4°C before beating it to use for desserts and cake dressings. Beat it in a cold bowl, if possible. If you wish, you may add powdered sugar in the cream before beating it. You don't need to beat the cream to prepare dishes and sauces, you can use it as liquid.
